Ingredients

  • 3 pounds sweet potatoes peeled and cubed (1.35kg)
  • ¼ cup packed light brown sugar (55g)
  • ¼ cup unsalted butter cubed (56g)
  • ¼ cup whole milk (60mL)
  • 2 large eggs
  • 1¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup packed light brown sugar (220g)
  • ¼ cup all-purpose flour (30g)
  • 1 teaspoon ground cinnamon
  • ¼ cup unsalted butter melted and cooled (56g)
  • 1 cup pecan halves chopped (90g)

Method

For the Sweet Potatoes:
  1. Start by preheating your oven to 375°F (190°C) to ensure it reaches the correct temperature for baking. Next, lightly grease a 9x13-inch casserole dish with nonstick spray or a small amount of butter to prevent sticking and promote easy cleanup. Make sure the dish is evenly coated but not overly greased, as too much fat can affect the texture of your sweet potatoes.
  2. Place the sweet potatoes in a large pot and fill it with enough water to cover them by about an inch. This ensures even cooking. Bring the water to a rolling boil over high heat, then reduce the heat to medium to maintain a steady simmer. Cook for 15 to 20 minutes, or until the potatoes are very tender when pierced with a fork.
  3. Be careful not to overcook; otherwise, they may become mushy and difficult to handle later in the recipe.
  4. Return the cooked sweet potatoes to the pot and mash them thoroughly using a potato masher or large fork. This ensures that the potatoes are smooth and creamy, which is essential for a rich texture in your casserole. Next, add the brown sugar, butter, milk, eggs, salt, and vanilla extract. Use an electric hand mixer or a wooden spoon to blend these ingredients until they are well combined.
  5. A hand mixer will yield a smoother filling, but stirring vigorously with a spoon will also work effectively.
  6. Evenly spread the prepared sweet potato mixture across the bottom of your greased baking dish, ensuring there are no lumps or gaps. Use a spatula to create a smooth and level surface. This step is crucial as it will ensure even cooking and an appealing appearance once baked. Take care not to over-smooth, which could lead to a less textured final product.
For the Topping:
  1. In a medium bowl, combine 1 cup brown sugar, 1/2 cup all-purpose flour, and 1 teaspoon ground cinnamon until well mixed. This step ensures even distribution of flavors in the topping. Make sure to use a fork to gently incorporate these dry ingredients for a crumbly texture.
  2. Stir in 6 tablespoons melted and cooled butter using a fork until the mixture becomes crumbly. The butter should be at room temperature and fully melted but not hot to avoid melting the dry ingredients. Finally, fold in 1/2 cup roughly chopped pecans for added texture. Ensure the topping is evenly mixed before proceeding.
  3. Gently spread the prepared topping mixture uniformly across the surface of the sweet potatoes in the baking dish. Ensure that every part of the sweet potato is covered to achieve an even golden-brown crust during baking. This step is crucial as it ensures a consistent texture and flavor throughout the casserole.
  4. Place the sweet potato casserole in the preheated oven and bake for 25 to 30 minutes, or until it is slightly puffed and golden brown on top. Keep an eye on it towards the end of the baking time to ensure it doesn't over-brown. You should see the edges starting to turn a light golden color and the center looking set but still slightly jiggly in the middle.
  5. Avoid opening the oven door frequently, as this can cause the casserole to deflate or undercook.
  6. After removing the casserole from the oven, let it rest for about 10 minutes before serving. This resting period allows the flavors to meld and the casserole to set properly, ensuring a more cohesive texture when served. During this time, you can prepare any garnishes or side dishes. Be patient; rushing to serve it immediately might result in a less appealing presentation and texture.

Recipe Notes & Guidelines
Serving Serve this sweet potato casserole warm with a dollop of whipped cream or a scoop of vanilla ice cream. It pairs wonderfully with roasted turkey, ham, and other holiday dishes.
Storage Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave or oven until heated through. This dish does not freeze well due to the texture changes upon thawing.

Pro Cooking Tips

  • Choose firm, unblemished sweet potatoes. Peel them with a vegetable peeler or sharp knife and cut into evenly sized cubes to ensure even cooking. Soaking the cubed sweet potatoes in cold water for 30 minutes before boiling can help remove excess starch.
  • Use light brown sugar for its rich, molasses flavor. If you prefer a milder taste, you can use dark brown sugar, but it will be slightly sweeter and darker in color. Ensure the sugar is packed tightly to measure accurately.
  • Select pecans that are fresh and have a rich, nutty aroma. Toasting them lightly before chopping can enhance their flavor. Store any leftover pecans in an airtight container at room temperature for up to 2 weeks.
  • Use unsalted butter for better control over the salt content. If you prefer, you can substitute with a small amount of olive oil or coconut oil, but this may slightly alter the flavor profile.
  • Ensure your sweet potatoes are fully cooked before mashing them; this will result in a smoother texture.
  • Using an electric hand mixer can help achieve a more uniform consistency, but a wooden spoon works just as well for those who prefer a slightly chunkier texture.
  • Let the casserole rest for 10 minutes after baking to allow it to set and make slicing easier.
